Scrumptious Sesame Pave



Ingredients
  • Large Smoked Ham Hoch (or 3 small)
  • 1 Onion
  • 1 Carrot
  • 1 Leaf of Gelatine
  • 1 Tsp Cumin Seeds
  • 1 Tbsp Wholegrain
  • Mustard


Method
  1. Place the ham hoch’s in a large pot with the onion and carrot roughly chopped. Cover with water and bring to the boil, then reduce to a simmer for 3-4 hours, topping up with water when necessary.
  2. The meat is ready when it falls from the bone effortlessly. Remove the ham hoch, and leave to cool enough to strip the meat off the bones with your fingers.
  3. Meanwhile, add the cumin seeds, and bring the stock left in the pot to a boil, reduce to 1/4 and add gelatine leaf.
  4. Once reduced, strain, add 100ml of the reduced stock to the shredded meat along with the wholegrain mustard. Combine and pack the meat into a terrine mould lined with cling film, leave to chill in the refrigerator for at least 5 hours to set.
  5. Once set remove from the mould and discard the cling film, cut into slices, 10 cm thick

To Serve
Serve with our sesame pave and a chutney of your choice.
