Tasty Tomato Bruschetta

  • 250g cherry tomatoes
  • 1 small red onion
  • 1 handful basil
  • 2 garlic cloves
  • 1 ciabatta for toasting
  • 50mls balsamic vinegar
  • 50mls extra virgin olive oil
  • pinch of salt
  • pinch of black pepper

  1. Begin by washing the cherry tomatoes then quartering and placing in a large mixing bowl. Finely slice the red onion and add to tomatoes. Bash the garlic cloves and add. Roughly tear the basil leaves and add. Dress with olive oil and balsamic vinegar. Then season generously with salt and pepper. Cover bowl with Clingfilm and leave to marinate at room temperature for an hour.
  2. Once marinated, discard garlic cloves and spoon mixture over slices of toasted ciabatta bread.

To Serve
An easy BBQ starter prepared in advance with fresh flavours. Garnish with buffalo mozzarella and fresh basil leaves For added flavour why not toast the bread on your BBQ grill.
