Doorstop Garlic Mushroom Bruschetta

Serves 2

2 Doorstop slices of a bloomer
bread of choice
2 Large Portobello mushrooms
100mls Double Cream
1 Garlic Clove
50mls Olive Oil
1 Tbsp. Fresh Chopped Parsley

Mince the garlic add to the olive oil & fry on medium heat, chop the mushrooms and add, fry until soft and tender.

Add the parsley to the pan, add cream & reduce till thickened or coats back of a spoon, add pinch of salt to taste.

To Serve Toast the bread and add the mushroom mix, garnish with some fresh parsley.
